Wasabi Mayo Sandwich

An approximately 1:.5:pinch mayo wasabi pickled ginger (the stuff at sushi places) mixture generously spread on an English muffin, roast beef, raw bell peppers, and (optional) brinned cucumber and carrots*.

*1 carrot, .5 cucumber, .5tbsp fish sauce, .5tbps sugar, rice wine vinegar and water (to taste). Put in a jar. Shake. Sit in jar overnight.

It's called preserved or pickled ginger.
